Smoked catfish
Catfish prepared in this way is an exceptional delicacy. I must admit that without the help of a friend it would not have succeeded.
Preparation steps
- Dry the pieces of fish finely, add salt and after 3 to 5 hours hang in the dryer. Dry in plum smoke. It usually lasts all day. There must be a low fire. So says my friend who did it for me. Preheat for ten minutes in a warm oven before serving.
