Smarn (Imperial Crushed)
Šmarn points to a failed dish, i.e. failed pancakes, and the imperial crumb denies this. Yet this candy is by no means a bad pancake. Preparation steps
- Mix the egg yolks with the sugar until foamy. Add a tablespoon by tablespoon of flour and milk stirring constantly until you get a smooth mixture. Then pour in the melted butter, add salt, lemon zest and stir a little more. Beat the egg whites until stiff and mix it carefully.
- Heat a tablespoon of butter well in a pan, then pour in the batter as for a thicker pancake. When the top side hardens and the bottom side is well baked, tear the pancake with two forks and fry gently, stirring and shaking the pan. Sprinkle them with crystal sugar and serve with some syrup.
- From this amount, 4 pancakes are obtained.
