Slovenian pirohy (domestic)

We all love pirohy / pirožky .. hand on heart ... in Slovakia I tried the best of my grandmother .. The original recipe is called Gazdovske pirožky .. I just didn't have brindza cheese .. that's why Slovenian .. with potato filling and feta cheese ... as we call it ... pirožky with sour cream, bacon / bacon is a 100% flavor concentrate in Slovakia ... necessarily blueberry for adults;)

Preparation steps

  • cook the potatoes, cool and peel .. for those who like small pies .. finely grate the potatoes .. for those like me, who like rustic - bigger .. chop with a fork ..
  • add a little cold water, 1 egg, salt, smooth flour .. - Tatra pies - potatoes, salt, egg, small semolina - Liptov pies - potatoes, salt, egg, rye flour, .... there are 100 ways to make fine dough .. every chef has his secret .. :)
  • make a smooth dough - it doesn't have to be sparse or thick .. stretch the dough with your hands .. I make it from half a centimeter ...
  • filling: 1 small boiled potato, feta cheese, chives ... when the mixture is thick, add drops of milk, some do not put herbs .. in winter, my grandmother also put dill ..
  • put the filling on the dough
  • some use forms for ravioli .. i work on antique .. glass + fork .. now is the best time for pirožky because i have a lot of potatoes from last season in the cellar ... i make more right away ... put in the frost .. when needed quick lunch or dinner .. just boil .. sour cream and that's it
  • put water and salt in the pot .. when it boils .. add pirožky .. when they go up, cook for another 5 minutes ... fry the bacon in the pan .. remove from the pot, grease a little with the bacon ...
  • classic serving: pirožky + fried bacon + a lot of sour cream @ Evichen123: and for those who don't eat that much meat: sometimes I make it like this: cream and herbs ..
