Slice walnut-orange

The cake is a processing of culinary orange slices, I adjusted them a bit to my taste, so here is another version ...

Preparation steps

  • Filling: Heat the milk on the stove. In a small bowl, mix the thickener, sugar and bourbon vanilla sugar, grated orange peel (usually I freeze the peel, it is easier to grate), egg yolks and mix with orange juice. When the milk is heated, cook the thick cream, stirring constantly. Remove from the stove, cover the surface with cling film and leave to cool.
  • Bark: Mix the egg whites for a few minutes, then gradually add the sugar until you get a fine snow of egg whites. Add the walnuts and flour, mix lightly with a food processor and pour onto a baking tray lined with baking paper and lightly coat with cold butter. Dimensions are 40x30 cm. Bake the crust at 170 degrees for about 15 minutes, depending on the oven. When the crust is baked and cooled, cut it upright into 3 or 4 pieces, as desired, so that you make 3 or 4 crusts 30 cm long.
  • Filling: Add 60 g of butter to the lukewarm cream and mix well (I add the butter cleanly to make the filling creamier, you can omit this), and when the cream is completely cooled, whip the sweet cream (I use sweetened cream, and you if desired) and mix with the filling, when I add similar cream I always mix with a food processor, it makes me a nicer cream.
  • Divide the filling into 3 or 4 equal parts (depending on whether you are working with 3 or 4 crusts) and fill the crusts. Finally, decorate the cake with chopped walnuts or grilled and cool well. Cut into thin slices. Pleasant! :)
