Skyr cake

Skyr is a high-protein yogurt that you have to buy in lidla, if you can't get it, use fresh cheese, in which case you won't need gelatin. The cake is very juicy and fine.

Preparation steps

  • Put whole eggs in a bowl and make them with sugar to make them frothy. Gradually add, stirring lightly with a spoon, flour and salt. Transfer the dough to an oiled tin 20x30 cm, bake for about twenty minutes at 180C. Take out the finished biscuit and let it cool well. Cut it in half. Work out the yoghurt with powdered sugar / of course do the same if you use cheese / Add whipped sweet cream and if you use yoghurt gelatin.
  • Soak the biscuit in milk to which you have added sugar. Coat with half of the yoghurt mixture, then coat with jam, and then put the rest of the yoghurt mixture. Put the other half of the dough on top, moisten again with milk.
  • Allow everything to thicken before cutting sprinkle with powdered sugar.
