Shrimp with semolina ...
A wonderful combination of shrimp and semolina with hot sauce ... one of my favorite Southern dishes ... easy and quick to prepare ...
Preparation steps
- Peel the shrimp. Season the shrimp. Set the shrimp shells aside. Shrimp base: fry the shrimp shells in a little olive oil to get a fine red color and to catch the brown color in the pan.
- Add 2 cups of 250 ml of water. Leave to cook for 5-10 minutes. Strain the stock and set aside.
- Fry the seasoned prawns in olive oil until they turn pink. Remove from the pan and set aside. Fry the hot sausages in the same oil and also remove and set aside. Finely chopped onions, finely chopped peppers and finely chopped jalapeno also fry for 5-7 minutes and then add finely chopped garlic and fry for another 1-2 minutes. Add 1 tablespoon of flour and stir.
- Add shrimp stock, sweet cream, shrimp and fried sausages to this mixture. Cook everything together for 10-15 minutes and then add finely chopped spring onions and finely chopped parsley. Season with salt and pepper. While the prawns are cooking, prepare the semolina as desired. It can be both white and yellow. I used white.

Serving
If you are making for children, throw out hot spices. You can season the skins with spices as desired. When the base is cooked, you will get 1 cup and a little less than half a cup of stock.
