Shak-Shuka

My grandfather made this dish for his children, and then my dad made it for his. Their performance could be briefly described as a tomato chimbur. For a long time I thought the name was made up. However on a trip to Tunisia I learned about their traditional breakfast dish Shaq-Shuka. The original version contains a variety of vegetables. Try this oriental simple dish of my childhood.

Preparation steps

  • Fry the vegetables in heated oil and let it simmer in its own juice until soft. Stir in the beaten eggs. Season before baking. The egg should be well fried.
