  • Clean the fish, cut off the fins.
  • Salt inside and out.
  • Coat with lemon juice inside and out.
  • Pepper the outside.

  • Chop all vegetables except potatoes and cook to half in a minimum amount of water.
  • Peel the potatoes and chop them into thin slices, then cook together with the vegetables.
  • Preserve the cooking water.
  • Place the vegetables on the bottom of the fireproof bowl and season with and pepper and olive oil.
  • Sprinkle with chopped olives.
  • Add some peeled garlic in one piece.
  • Lay the fish on the vegetables.
  • Chop the cleaned champignons and arrange around the fish.
  • Pour a little water over everything in which the vegetables were cooked and wine.
  • Cover with a lid from a refractory bowl and put everything in the oven at 200 oC to bake-cook in its own juice and steam.

Serving

Serve warm with lemon. Drizzle with olive oil.
