Scrambled eggs with kohlrabi and chorizo sausage
On cool, autumn evenings, this becomes the perfect combination of "full" taste and a powerful, recognizable scent… Scrambled eggs my way…
Preparation steps
- Fry sliced chorizo sausage (or something similar) in oil on thin slices and arrange it fried on a paper towel
- Fry not very finely chopped onion in the same oil… until “glazed”
- Add the cleaned kohlrabi cut into very thin slices, which you then cut into thin strips.
- Also cut, previously peeled potatoes
- Add kohlrabi and potatoes to the onion and fry, stirring constantly
- Add washed, drained and very finely chopped kohlrabi leaves
- When all the vegetables are "done", return the chorizo sausage to it
- Stir the spices into the beaten eggs and pour over the vegetables with the sausage
- Stir to obtain a lumpy texture

One of the rare recipes in which I use sausages… a very fine combination of the mild taste of kohlrabi with sausage and the soft texture of scrambled eggs… a very, very fine, fragrant dinner. I usually use kohlrabi leaves in cooking soups or in preparing dishes with eggs. This is a great way to elegantly "cheat" kohlrabi to your family… enjoy the taste and smell of this dish :)
