Rosa Cooking

Scampi with coriander, ginger and chilli peppers

Happy New Year!

Preparation steps

  • Prepare all ingredients
  • Combine with scamps
  • Stir well.
  • Leave in the fridge to marinate for an hour or two. Maybe longer. Finally, fry them in a pan for a very short time, one 30 sec. on one side and also 30 sec. on the other side. That is, if the scampi have already been prepared, ie cooked. And if they are fresh scamps, of course, they must first be cleaned, cut on the back, remove the black thread, ie the hose. Bake them just enough to change color, from gray to pink. When one side has turned pink then you turn them to the other side. And it all takes 4 minutes. they should not be baked longer, because then they become rubbery.

Serving

They can be served with cooked rice, pasta, or whatever you want. We eat them with toasted French bread and guacamole.
