Saumrole
Puff pastry + eggs + sugar = SAUMROLE
Preparation steps
- Rolls: Cut the puff pastry lengthwise (approximately 1.5cm-2cm) and wrap around a mold coated with oil. Coat with egg, sprinkle with sesame and almonds. Bake in the oven for about 15-20 minutes at 180 °. Baked rolls, while still warm, remove from the mold and leave to cool.
- Filling: For the egg whites and sugar over steam (80 °), whisk until foamy and then stir for another 5 minutes without steam. Fill the rolls with the summit.
