Saudi Mutabbak * مطبق

Popular street food in the Middle East. This is a popular recipe of the Hijaz region in Saudi Arabia. Mutabbak means something that is folded, wrapped.

Preparation steps

  • I used mutabbak crusts, in case you can’t find the option is ready-made noodles (a little thicker) for the pie or knead a special dough as for the noodles.
  • Coat the noodles with a mixture of warm water and oil to soften them a bit and make them easier to stick.
  • Prepare the filling by frying the meat in a little oil and add finely chopped red onion and green peppers / fry everything together. Add finely chopped parsley, green onion and coriander, season and add scrambled eggs. Put the filling in the middle of the noodles.
  • Bend as in the picture, but make sure that the noodles stick well so that the filling does not leak during frying in the pan.
  • ** You have two options when preparing the filling, if you are afraid that the eggs will remain unbaked, fry everything together in a pan before filling or fill immediately. Fry in a pan with quite a bit of oil. *** Preparation of the dough. Knead the dough as for noodles, divide the dough into a couple of balls and spread it on an oiled base with your hands. Fill as with ready-made noodles, so put the filling in the middle and wrap the same as with ready-made noodles and oils, because the noodles are soft and already oiled.
