Sardines on saur
My dad is Dalmatian. He said that sardines and other small fish when he was little were actually fish for the poor. They had no money for another fish. When there were more fish that they could not eat the same day, the women prepared "na saur". Today, it is being mined less and less because it has been caught a lot. I don't need to tell you about it as a healthy food. This is the recipe by which my dad learned to make this dish, his mother-in-law, and my grandmother and from whom I learned everything I know about cooking. Apart from the fact that we all prepare the stew in the classic way - we bake it in a pan, this is an old recipe that will be nothing new for Dalmatians, but I'm sure it will be something new for "purgers" and others who haven't tried it yet and love fish. in a hundred ways.
Preparation steps
- Clean the sardines. Add salt and roll in flour and fry in oil.
- Cut the red onion into rings. Put the oil and onion in a special pan and let it simmer a little, but don't stir it too much so that it doesn't fall apart.
- In a bowl, preferably with a lid, put olive oil on the bottom first, then a row of middle and a row of onions. Repeat the process until you have used up all the ingredients.
- Finally, add the vinegars as desired and gently shake everything.
- Put in the fridge. It can be eaten for several days.
