Samobor cutlet

A traditional Samobor dish that was not very nice to me, until I tried it in the way of a nice lady who I will not name now. I was very boring and the whole time she was preparing the dish I was closely following everything she was doing. She probably cursed everything on the list that I was wandering around the kitchen, but the smarter one gives in ..... That was of course her :) I wanted to put a picture to see how phenomenal this dish looks, but when everyone grabbed a knife and jaws I barely managed to take a picture of this :)

Preparation steps

  • Add salt and pepper to the chops a few minutes before baking.
  • Heat the lard in a deep frying pan. Roll the cutlets in smooth flour on one side only and put them on hot fat. Be sure to arrange them in such a way (and choose a suitable pan) to cover the entire bottom of the pan. Otherwise the fat would burn in a place where there are no chops, and that’s not fine
  • While it is lightly baking, peel the potatoes and cut them into four pieces. Place them in the fryer at 160 ° C
  • Turn the chops so that they do not burn and when they are completely cooked, take them out on a plate. Reduce the fire ....
  • Now you can slowly start swearing at yourself if you have a bore with you who is staring at what you are doing and not letting you rest ..... Feel free to take a few saints off the sky and remember mommy "dear" helper. This lady was very polite and her tolerance threshold is very high :)
  • Put finely chopped garlic, a little vegeta, chopped fresh parsley, A LITTLE chili pepper on the fat. Our cook got a little angry, because she answered my questions and didn't pay attention :) But that added a real spicy trick to the dish. After that we drank as if we had come from an excursion in the desert ....
  • When it is a little fried in baking fat, cover it with a little warm water and scrape the bottom of the cooker so that everything that is left of the cutlet separates from the bottom ..... It will be a great sauce later.
  • Drink beer or gemist to avoid stress .... Stress is the worst friend of a good Samobor cutlet
  • Let it all simmer a bit and then put the potatoes that we baked in the deep fryer on it and simmer it all together a bit more ....
  • After that, return the chops to all this to warm them up a bit more
  • And that's it......
