Salty spring cake or how to recycle Easter eggs
Easter is over and the baskets are still full of Easter eggs… .if you don't want to throw them away, here's a simple but nice way you can use them… ..
Preparation steps
- Knead the dough from all the listed ingredients and leave it in the cold while you prepare the filling.
- Thaw the spinach and drain well.
- Saute finely chopped spring onions in two tablespoons of oil, add crushed garlic and when it smells good, add spinach and salt, pepper and to taste. Simmer briefly, remove from heat and cool.
- Mix cottage cheese and eggs, and especially bread crumbs, flour and baking powder.
- Add the chilled spinach to the cheese, mix well and then add the flour and bread crumb mixture. If necessary, season the taste with salt and pepper.
- Grease a 26 cm diameter mold and sprinkle with bread crumbs.
- Roll out 2/3 of the dough so that the dough covers the bottom and sides of the mold.
- Pour about 1/3 of the filling on the dough, and then spread the halves of hard-boiled eggs on the filling.
- Cover with the rest of the filling.
- Roll out the rest of the dough to the size of a mold and place over the filling.
- Bake in the lower half of the oven at about 180 C for about 45 minutes.
- Leave the roast to cool a bit, remove the hoop and decorate as desired with radishes, thinly sliced egg slices, parsley… ..
