SALTIMBOCCA ALL’ORTOLANA (Veal steak with vegetables)
Saltimbocca (literally translated as “jumping in your mouth”), are one of the typical Italian meat dishes. The most famous are Saltimbocca alla Romana. They are usually prepared from veal, but chicken and turkey can be used. Steaks can be prepared in different ways - stretched, folded or wrapped, sautéed. How to say, it will satisfy all tastes, and you will always have something a little different. “Ortolana” comes from the Italian word “orto” which means garden.
Preparation steps
- Place the steak on a meat board, cover with a piece of cling film, and thin a little with a meat hammer.
- Add salt, pepper and sauté.
- Put 1 slice of prosciutto and 1 sage leaf on each steak. Attach the prosciutto and sage with a meat toothpick.
- Heat the butter and oil in a deep frying pan, then briefly fry the meat on both sides. Remove the meat, place on a plate and keep warm.
- In the meantime, wash and clean all the vegetables. Cut as desired (into cubes, pieces, sticks).
- Fry onions, carrots and peppers in the same fat first. After a few minutes, add the zucchini and mushrooms. Finally, add the frozen vegetables.
- Cook covered for 10-15 minutes until vegetables are tender, add a tablespoon of vegetable broth if necessary.
- Towards the end, add the spices and cream.
- Place the meat over the vegetables to heat, remove the toothpicks and serve.
