Salad fingers
They can rarely be found in markets, but if we find fingerlings, it's worth preparing them in some way ... maybe for a salad
Preparation steps
- Put the fingerlings in a bowl, pour water over them and cook over medium heat for 15 minutes. We clean the mussels and cut the muscular part into thin slices, and first we clean the tubular part well and cut it into rings.
- Finely chop the garlic and parsley.
- Put sliced mussel meat in a salad bowl, add salt, pepper, olive oil, a little wine or lemon juice, garlic and parsley and mix the ingredients.
- Leave in the fridge for a few hours and then serve as a cold appetizer.
