Sage chips
At one reception we were served with these chips with white champagne. Afterwards, I found a recipe with Jamie, and RedHodChili reminded me of that. It may come in handy as an introduction to a nice dinner.

Preparation steps
- Wash a large handful of sage leaves and drain well, ie put on a kitchen towel and dry.
- In a bowl, mix the flour and salt and add white wine to get a smooth mass of goose from the pancake batter.
- Put sage leaves in it, stir well so that all the leaves are covered with the mixture and fry in heated oil. Small bundles can be taken out and arranged in a pan, I put the leaves to be separated. Place fried on kitchen towels to absorb grease.
- They are very fine and aromatic, with champagne in particular.
