Sable biscuits made of fried or baked flour
franc. la farine torrefie-fried flour… .one of the gastronomic "novelties" (in quotes because it has long been used in soups and sauces as we all know) discussed by the duo Herve This - Pierre Gagnaire, top French gastronomes… little I studied their discussion, which in itself is very interesting ... and it's about what kind of taste a dessert or dessert with "baked" flour gets? find out for yourself ..: D
Preparation steps
- Set the oven to 160 degrees. Arrange the flour on a tray and place in the already preheated oven, and be sure to stir the flour on the tray approximately 5 minutes by opening the oven of course. The flour will get a slightly brownish color, however it will still be white. Remove from the oven and allow to cool. This will take about an hour. You can pre-bake the flour and store it in an airtight container and use it for other desserts.
- Stir in the flour and sugar in a bowl, add the cold butter to the chopped pieces, and knead until you get a bread crumb-like mixture. Then add the egg yolk and a tablespoon of milk, knead the dough, if it is too dry, add a little more milk.
- Cover the tray with baking paper and then roll out the dough, cut the shapes as desired, and let it rest for an hour on a cold tray with unbaked biscuits.
- preheat the oven to 180 degrees, put the tray in the oven and bake for 10 minutes making sure they don’t burn, they’re done when lightly browned. Remove and allow to cool.
Serving
With this process, the flour gets a taste..the taste is a little stronger, a bit reminiscent of the taste we have while eating chocolate… judge for yourself :)) You can add orange peel if desired, then they get a special smell and taste - a trick! I added diced candied oranges ..: DD Really watch how long you bake them, they are a little overcooked for me, although nothing terrible… if you are making thicker biscuits then it will take a little over 10 minutes. The original recipe says 20 minutes, but I think that after 20 minutes they would be inedible.
