Russian sweet loaves with cherries (Vatrushka buns)

This dough is fantastic ... I love dough and I have tried many, but I have not tried something like this yet .... you can make buns, rolls, these little sweet loaves ... whatever you want. In Russian, they are Vatrushka buns and they are usually filled with fresh cheese and maybe with any fruit ... I used cherries from compote and I can also use frozen cherries.

Preparation steps

  • Pour warm milk and yeast into the bowl, stir and let the yeast start working, about 5 minutes then add 75 g of flour and 35 g of sugar, mix it all well with a whisk, the mixture will be thin and leave in a warm place or in oven, which you have heated to 100 * C and leave for about 20 minutes for the dough to rise. If the starter is at room temperature, it will take longer than 20 minutes.
  • When the dough has risen, add a beaten mixture of egg, melted butter, sugar and a pinch of salt, which you have beaten with a whisk. Turn on the mixer with spiral extensions and add a little flour of those 350 g, constantly stirring (the original recipe asked for 410 g, but I have 60 g left), I added a total of 330 g and I added the remaining 20 g when I finished the dough with my hands. The dough is soft, but does not stick to your hands. Pour a little oil, coat the dough and dough with oil, cover with transparent foil and put back in the oven to rise the dough. This dough, when it rises, will be like a foam.
  • Pour the dough on the work surface, I did not flour it, gently fold the dough on all 4 sides and divide it into 14 parts (mine was about 65 g each) and mix each part and shape it into a small ball.
  • Take a 22cm X 33cm baking tray, grease with butter or baking spray and arrange the dough shaped into balls. With a small, brandy glass, the bottom of which you first dipped in flour, make a hollow in each ball and put 4 cherries, sour cherries or whatever fruit you want in that hollow, you could sprinkle half of the plums with a little sugar on top.
  • Cover the baked pastries with a transparent foil and leave them again in a warm oven for about 20 minutes for the pastries to rise. Coat the risen pastry with beaten egg. When you take out the pastry, turn on the oven to 180 ° C to heat up while you make the crumbs.
  • Make a sprinkle / crumb Put sugar and cold butter in the flour, cut into cubes and rub into the flour with your hands, sprinkle over the dough. Bake in a preheated oven for about 20 to 22 minutes or until golden brown on top.
