Royal asparagus
A wonderful recipe with hollandaise sauce
Preparation steps
- Wash the asparagus, clean and remove the lower part (you can put it all for the asparagus soup which you additionally thicken with cream) .... put the cleaned asparagus to boil in salted slightly sweetened water with a few drops of lemon, cook for about 10 minutes / do not overcook them .
- Holandes sauce: egg yolk, wine and a pinch of salt and sugar mix well to steam and mix until thickened, you will need a few minutes, remove from the steam and add melted butter, stirring spoon by spoon, if too thick add more wine until texture it is not medium thick and creamy, but you can't fail it is not complicated., season with salt and freshly ground pepper.
- Wrap the asparagus in smoked salmon fetishes, pour over the Dutch sauce, add a little more pepper. coarsely ground pepper / optional.
Serving
Dutch sauce goes well with all cooked vegetables, but also with meat, for example, it is an excellent side dish to lamb with the addition of fresh mint cut into strips or with pork with the addition of marjoram and the like.
