Preparation steps
- Put the soup to boil. When done, reduce the heat to a minimum. Clean the chickpeas like a carrot or peel them and cut them into cubes.
- Put a little chopped onion with diced chickpeas in a little olive oil. Simmer for ten minutes on low heat.
- Add the unwashed rice, sauté everything and pour white wine over it.
- Wait for the wine to evaporate and start pouring over the soup.
- Add saffron.
- As soon as the soup evaporates, add a little new and stir the rice as often as possible. When the risotto is done add a couple of tablespoons of grated cheese and mix well.
