Risotto with sausage and sun-dried tomatoes
Two recipes in a couple of days :) No, I'm not going to some mass production of recipes, I just want to share with you a recipe that I recently discovered, and I really liked it. There are a couple of similar ones here, but I haven't seen one like this. Try it, it's very simple and exquisite!
Preparation steps
- In a deep-bottomed pan, sauté the finely chopped onion in butter. When soft, add the rice, stir and sauté until translucent and glassy. Add the wine and mix well until it evaporates. Gradually add the stock, stirring constantly. Stirring the risotto, it becomes increasingly creamy. After about 20 minutes, remove from the heat, season with salt and pepper. Stir in cold butter and grated parmesan.
- While you are finishing the basic risotto, make the sausage sauce. Saute the onion for a few minutes until it softens, add the sausage and simmer for 5 minutes, then add the dried tomatoes and chopped peeled tomatoes and rosemary. Saute for a few minutes until it thickens.
- Pour the sauce over the risotto or like me mix and enjoy the fullness of the flavor! Sprinkle extra with chopped parsley and parmesan, if you like and that’s it!
Serving
Serve immediately after you have mixed all the ingredients. I just wish you good!
