Risotto with mushrooms and leeks from the microwave

Something very tasty and done quickly. It goes well as a side dish with fish or meat. Try it !!

Preparation steps

  • Put olive oil, garlic and leek in a fireproof bowl. If desired, one chilli pepper can be added. Place in the microwave, cover with cling film and cook 5min on High.
  • When you take the bowl out of the microwave, mix 300g of rice and add 850ml of vegetable broth (I often use chicken cubes). Stir and then season with pepper and salt. I often add more chilli flakes. I like it a little spicy :) Be careful not to overcook. Return the bowl to the microwave and cook for 10 mins on high, this time without foil.
  • Slice the mushrooms and mix them into the risotto. Cook for another 6 minutes. When it is ready to let it "stop" for a few minutes. Sprinkle with parmesan before serving.

Serving

It can be served alone or as a side dish to meat or fish. The menu goes perfectly with baked cod fillet.
