Rice ice cream with dried fruit
Unusual - maybe, but nice, at least to my taste. Like I said, who likes sutlijas, this ice cream is the real thing!
Preparation steps
- Chop the fruit, then pour over with brandy (or rum), and leave covered for 3 hours, or overnight.
- Boil the milk and rice with cinnamon and nuts, then squeeze on the lowest heat and cook, stirring occasionally, until all the milk is absorbed, if the rice is not soft enough and there is no more milk, add more hot milk, the softer the rice, the better. Remove the cinnamon and nuts, and cool the rice.
- Make a cream. Whisk the egg yolks with the sugar and density in a whisk. In a separate bowl, cook the milk, then add it hot to the egg yolk, but gradually, and stirring constantly. Return to the pan on the stove and cook until thickened. Add vanilla. Cool down.
- Mix the cooled rice and cream, pour into a bowl suitable for freezing and put in the fridge to freeze for 4-5 hours until it is half frozen. Stir well, to break up the ice crystals, add the fruit, and freeze for another 2-3 hours until frozen enough to serve.
Serving
You can also use an ice cream machine, and when you mix rice with cream, put it in the machine for 4-5 hours, then the same steps —- add fruit, and again in the machine for 2-3 hours. Additional information: Ice cream should be eaten immediately, it is not suitable for additional freezing.
