Remulada
Remulada is a fine cold mayonnaise-based sauce, and should be made at least half an hour before serving so that the aromas and flavors of the ingredients permeate each other. It should be kept in the refrigerator until serving.
Preparation steps
- Put pickles, capers, salted fish and parsley on a board and chop finely. Put mayonnaise in a mixing bowl and lightly add wine while stirring with a whisk, so that no lumps form. Stir the other chopped ingredients into the smooth sauce,
Serving
It is served separately, with warm appetizers of vegetables and dough, with boiled fish, roasted or fried chicken, etc.
