Preparation steps
- Peel: Whisk 4 egg whites firmly with 4 tablespoons of sugar, then add 6 tablespoons of walnuts, 1 tablespoon of cocoa and 2 tablespoons of flour. It is a mixture for one crust, bake a total of three at 180C.
- Filling: In a steaming pot, pour 4 dc of milk and 250 g of sugar. In a bowl, whisk 12 egg yolks, 3dc milk and 8 tablespoons of flour. Whisk well to be lump-free. When the milk starts to boil, add the egg yolk mixture. When everything is nicely combined and thickened, add 200 g of chocolate. When melted, leave the filling to cool well. Separately whisk 250g of margarine with 200g of powdered sugar, then combine with the cooled filling.
