Raw cake with figs, mango and strawberries
You liked the last recipe for raw forest fruit cake, so I decided to make another one with slightly different ingredients. Instead of dates and walnuts, I put dried figs and almonds in the base, and instead of forest fruits, I put mangoes in one part of the cream and frozen strawberries in the other.
Preparation steps
- We will put almonds, figs and coconut oil in a multipractice, we will chop everything and the base for the cake is ready when we can form a ball from the mixture that does not fall apart with our hands. We will press the base into a mold with a diameter of 24 cm (we will put a transparent foil on the bottom of the mold beforehand).
- At a very low temperature we will melt coconut oil and honey.
- We will put squeezed cashews, lemon juice and melted coconut oil and honey in the multipractice.
- We will leave half of the cream in the multipractice and we will add finely chopped mango to it, we will make everything well to get a uniform mass.
- We will put thawed strawberries in the other half of the cream.
- We will put mango cream on the fig and almond base first, and strawberry cream on it.
- We will leave the finished cake in the freezer for a few hours. Before serving, be sure to leave the cake for at least half an hour at room temperature to make it creamy.
