Raw Avocado Lime Cheesecake
If someone told me that an avocado cake is so good, I wouldn't believe it. However, this cake is really a paradise of flavors! Avocados go great with honey, lemon and walnuts. Very nice and refreshing cake that does not bake. No eggs, sugar, flour, butter, etc. - Vegan & Raw.
Preparation steps
- Line a mold (25 x 20 cm), or round (~ 22 cm ) with baking paper. Grind walnuts, coconut and dates and add melted coconut oil. Put the mixture into a mold and flatten it. Put the mold in the freezer.
- Put the avocado, lemon, honey and melted coconut oil in a bowl and mix the mixture with a stick mixer until you get a smooth filling. Arrange the filling in the mold and place the stake again for about 30 min. in the freezer. Then take out the stake and put it in the fridge for another 1 hour. Garnish with coconut and lemon zest.
