Fantastic muffins with eggplant and zucchini ....

Preparation steps

  • Wash and dry the eggplant and zucchini. Do not peel. Finely chop the onion and garlic. Eggplant and zucchini cut into cubes. Finely chop the dried tomatoes in the oil and kalamata olives. Set aside.
  • In a slightly larger pan or skillet, add a little oil and put all the vegetables to fry..Add salt, pepper and crushed red pepper flakes and fry for about 5-10min.When done, remove from the oven and add finely chopped dried tomatoes in oil and finely chopped kalamata olives. Set aside. If you have a little liquid in the vegetable pan, shake it out.
  • In a small bowl, mix the eggs, milk and oil. In another bowl, add flour, baking powder and sugar. Add the egg mixture to the flour mixture and mix well with a whisk.
  • Pour the vegetables into the flour mixture and mix with a spatula. Add parmesan cheese to it and mix again.
  • Sprinkle the muffin pan or coat it with a little oil. Place the mixture in a baking sheet. Put to bake in a preheated oven at 180 C for about 25-30 min. I baked for 30 min. Remove from oven and wait about 5-10min. to get a little cold.

Serving

Remove everything you don't like from the ingredients and add what you like ... you can also use black flour and milk with reduced fat ...
