Pussy in the nest
With just a little more effort and time, you can turn an ordinary lunch into a game… ..
Preparation steps
- In a little oil (just enough to cover the bottom of the pan), sauté the diced onion until glassy, then add the diced chicken. Simmer until the chicken is white on all sides, then add a little water, red pepper and frozen peas.
- Add salt and pepper to taste and simmer until the peas are soft. Towards the end, add the chopped parsley and corn. Simmer until all the water has evaporated.
- For nests, put boiled potato cubes in salted water. Drain the boiled potatoes well, put them back in the pot and on the fire and stir it on the fire for a few minutes to dry a bit.
- Add margarine and egg yolk, season to taste and allow to cool just a little.
- Cover the baking tray with baking paper.
- Make small potato burgers with your hands (no bigger than a cake spatula) and make nests with a decorating syringe.
- Lightly coat the nests with beaten egg yolk and place in the oven at 200 C until the egg yolk is slightly browned.
- Using a cake spatula, remove the nests on plates decorated with lettuce leaves, fill them with the filling and serve immediately.
- If you have a little stuffing left, serve it next to and around the nest.
