Pure Nougat
Here is a recipe for all those who can't buy ready-made nougat. The mass is great and very grateful for the work, I am just thrilled.
Preparation steps
- Grind the hazelnuts in a blender. Blend on high speed for about ten minutes, turn off several times and stir in the hazelnuts.
- Add powdered sugar to the hazelnuts and blend on the highest speed until the mass becomes slightly oily. Also, turn off the blender several times and stir the mixture.
- Melt the chocolate and cool it to about 30 degrees and then add it to the hazelnuts. Blend on the highest speed for about ten minutes, until the mass becomes smooth.
- The mass is a little thinner at first, but after about ten minutes in the refrigerator it tightens. I put the mass in a jar, but it can be cooled a bit and poured into a board or poured into a tray. If you want the mass to be more elastic at the end of the blending process, add a teaspoon of glucose syrup.
- The mass can be made of both almonds and walnuts, and chocolate can be made both milk and bitter. I tried all the variants and it turned out great.
