Preparation steps
- Pour oil into a deeper pan, heat it, and sauté coarsely chopped onion and garlic on it. Add the diced pumpkin. Add salt and pepper, add spices, mix well, then simmer for a minute. Add the broth, reduce the temperature, then cook until the pumpkin softens.
- Add 2/3 cans of beans to the soup, and blend everything together. Return to the hob and let the soup boil again. Remove from the heat and add the chopped parsley.
