Pumpkin dumplings in Salsa from Poma

We definitely like zucchini, and since we are in the fruit / vegetable phase, I am constantly looking for rcp on the net to make us something a little different from the standard stew / cuspajza or vegetables not leso, or steamed. Today we had these "meatballs" oliti meatballs that I served with boiled potatoes and fresh sardines from Port Lincoln, we really enjoyed it :)

Preparation steps

  • Heat the oil in a frying pan and simmer the crushed garlic (half a minute), taking care not to burn it. Add the zucchini, salt, pepper and simmer for about 5-7 minutes on high heat until they release water and all the liquids evaporate. Transfer the stewed zucchini to a colander to cool and continue to squeeze over the tec (save the juice that will drip out, you can use it for some stock or a light vegetable soup). Put Italian bread crumbs in the bowl, which you can make yourself if you don't already have them. ITALIAN BREAD CRUSHES - Add half a teaspoon of salt, black pepper, dried parsley and half a teaspoon of garlic powder to one cup of pear crumbs. Then add a quarter teaspoon of onion powder, dried oregano and basil. Mix everything well, put in a jar and use as needed. In a bowl, add the grated cheese, lightly beaten egg, chopped fresh basil and pretzumula to the chilled zucchini and mix everything well. Leave the mixture for 5-6 minutes to combine everything finely.
  • Turn the oven to 180 degrees C. Line the baking tray / pan with parchment paper, moisten your hands and form balls / meatballs. Place them in a preheated oven for 25-30 minutes.
  • I had my own, homemade SALSA in ice, which I took out this morning and finished eating in it. Of course, purchased salsa can also be used. Put the baked meatballs in tomato salsa / toc and cook on low heat for 7-8 minutes. Try and refine the flavor if you think you need to add salt and pepper.
  • Serve with the addition of ricotta cheese and a couple of basil leaves.
  • Serve with wholemeal pasta, brown rice, boiled potatoes, mashed potatoes or whatever you like :) I would like a piece of fine bread and a bunch of salad, but since we don't have bread because we don't buy it, we ate this today with boiled potatoes and fried sardines.
  • I had a little bit of mixture left, just for one half, so I put it in the salsa and thickened the toc nicely. Also, I chopped the ends of the zucchini that I didn't build and put them in the toc, so I think that a piece of bread would suit me best with all that :)
