Preparation steps

  • DOUGH: 1. Melt instant coffee in hot water. 2. Put coffee, honey, sugar and butter on the fire. Cook, stirring constantly, until butter and sugar are completely melted. 3. Pour the cooked, dissolved mixture into a large bowl and allow to cool for 15 minutes. 4. Add vanilla and other spices. 5. Whisk the eggs, baking soda and baking powder into the mixture. 6. Add all the flour and mix well with a food processor to combine everything. 7. Cover the dough with cling film and place in the fridge for min. 4 hours. 8. After cooling, form balls of about 1 teaspoon of dough, arrange on a baking sheet and bake at 170-180, until you notice that the bottom of the gingerbread "glows" or takes on a brown color. Gingerbreads will be soft to the touch, but will harden when cooled.
  • GLAZING: 1. In a bowl, whisk together the powdered sugar and milk. 2. Dip fully cooled gingerbread in icing and allow to air dry for 1-2 hours.
  • Store gingerbread prepared in this way at room temperature in a closed box. From half of the mixture, 80 medium-sized gingerbreads came out of the menu.
