And it's successful ;-) Lasagna is hard to "guess" with all those fatty and delicious ingredients :-) And I somehow succeeded with lean alternatives :-) Although they are easy to make, they are "boring" for me to prepare and I have to be special in the mood for them, but when my father wants ... what will I do ;-) ?! Then why lasagna :-) Anyway, this is a wonderful vegetarian variant ...

Preparation steps

  • Fry the sliced ​​onion in a little oil and a little salt, then add the pre-soaked soy flakes with a little water in which they are soaked, after a minute or two and chopped fresh tomatoes. Put thyme and allspice, a little balsamic and let crunch, at the very end put and mashed garlic.
  • Make a lean variant of besamel: fry the flour in a little oil, then alternately add hot water with which you have previously soaked dried porcini mushrooms and oat milk to the desired density. Add salt, mustard, nutmeg and pepper.
  • Coat the baking tray with besamel, put lasagna crust over it, besamel, a little chopped soaked porcini mushrooms, just to smell, then red sauce, torn pieces of tofu, then crust again and so on ... It depends on how high lasagna you like ;-) Finish with besamel, and if you have any red sauce left, put it over too.
  • Bake at 200 degrees, first covered with foil, and 5-10 minutes before the end, uncover it, grate the tofu on top and return it to the oven until the fork passes easily ;-)

Serving

I served it with homemade mint pesto, because ketchup in our house is one of the first on the list of foods to avoid :-) It would definitely fit perfectly :-) Olives, possibly the most common green salad with a little pepper, olive oil and balsamic .. .you don't need anything anymore.Nice ;-)
