Potato croquettes with almonds

Preparation steps
- Wash the potatoes, put them in a pot and pour water over them, so that they are completely submerged, cook for about 30 minutes;
- Drain the potatoes, peel them while still hot and squeeze them through a press or mash them. Sprinkle half the amount of flour, add eggs and knead by hand or with a whisk into an elastic well-shaped dough. Add the rest of the flour to the dough, add salt and pepper and season with nutmeg.
- Spoon the pieces of dough. Sprinkle the dough pieces with flour with your hands and make balls;
- Mix the breadcrumbs with the almonds, roll the potato croquettes in the mixture. Heat the oil in a deep fryer or deep frying pan and gradually fry the croquettes until they become golden brown.
- Remove the finished croquettes with a slotted spoon and leave them to drain on paper. Keep in a warm place until all the croquettes are done.
