Pork Malibu
I saw this with Rudolph van Veen on 24Kitchen, so I said give it a try, but I'm not happy. I’ll put in the original recipe, but I’d definitely change some things if I did it again. And I would do better with chicken.
Preparation steps
- Marinate the pork in rum and coconut for twelve hours.
- Chop pineapple, peppers, onions.
- Roll the pork in flour and fry in oil. When the pork is near the end of frying, add the onion, then the paprika. When the onions and peppers are cooked, remove the pork and add the chopped pineapple. Add salt and pepper.
- Drizzle it all with the marinade in which the meat was marinated, and thicken with cooking cream.
Serving
Serve with cooked rice.
