A simple recipe for pork in a cream sauce with mustard, which is known to go well with pork. With a little horseradish, chili and sour cream that will soften the strong taste of the sauce, it will be a hell of a delicious fillet :) This is a dish for every occasion, even for a quick festive and festive dinner.

Preparation steps

  • Choose a pan that is resistant to high temperatures and can in the oven. Meat preparation: Rinse the fillet under cold water and dry with a paper towel. Remove fat and membranes. Add salt and pepper well. Turn on the oven to heat to 190 ° C. Pour oil into the pan and heat over high heat. Lower the fillet and fry it without turning on that one side for 4 minutes. Occasionally move the fillet to prevent it from sticking. Remove from the heat. Turn the fillet in the pan to the unbaked side and place it in the preheated oven. Bake for about 20 minutes, or until the fillet is browned, but it should remain soft and juicy inside, never overcooked. Remove the pan from the oven, transfer the fillet to a plate and cover so that it does not cool. Sauce preparation: Remove excess fat from the pan if it is there, and it should not be if we have cleaned the fillet well. Add broth or water, then leave for a few minutes to cook. Add sour cream. Add horseradish, mustard and chili peppers. Cook over low heat for 5-10 minutes, until the sauce is reduced and thickened. When bubbles appear, it is a sign that the sauce is near the end of cooking. Remove the pan from the heat and stir in the cold butter. Add the chives. Make sure the sauce is salty enough, then adjust the taste if necessary. If the sauce has cooled and thickened too much before serving, heat it briefly over low heat. Cut the fillet into 1.5 cm thick slices and serve with the sauce. Preparation of the side dish: Cook the broccoli in a pot with heated water to which we have added a pinch of sugar, salt and a few drops of lemon. After a few minutes, pour cold water over the broccoli to keep it a nice, green color. Preheat the oven to 200 ° C. Place the paper on a baking sheet. Peel the potatoes and carrots, send them under water and cut them into pieces. Place the vegetables on the prepared baking tray, add salt, oil and stir. Arrange so that the pieces do not overlap. Place the pan in a preheated oven and bake for about 20 minutes, or until the vegetables are soft and browned. Stir at least once during baking. Serve immediately.
