Polenta and apple cake (bustrengo) alla Jamie Oliver

An interesting and simple rustic cake from San Marino.

Preparation steps

  • Mix the flour, polenta, bread crumbs and sugar in a large bowl. In another bowl, mix the milk, eggs, honey and olive oil. Now combine the dry ingredients with the wet ones. Finally add the apples, figs, raisins, grated orange and lemon zest, cinnamon and salt. Sprinkle this mixture into a butter-greased cake pan. The mixture will be liquid as for donuts. Bake in a preheated oven at 180 ° C for about 50 minutes.
  • When the cake is done, sprinkle it with powdered sugar.

Serving

At the end, you can sprinkle the cake with powdered sugar or serve it with whipped cream. The most delicious is warm.
