Preparation steps

  • I cut the cabbage into noodles about 1 cm wide, put it in a large sherpa and pour water over it.
  • After about half an hour of cooking, I add the ham cut into pieces, so it is cooked for another half an hour, on a very low heat.
  • During that time, I cut large onions, garlic and carrots into the largest oven pan.
  • When the cabbage is half cooked, I strain it, but I don't throw away that soup, so I first arrange the pieces of meat over the onions, and then the cabbage over all that. I put a little fat in places over the cabbage, then over the oregano, pepper, a little basil and allspice, and I pour all that with a little of the soup in which the cabbage was cooked.
  • I wrap the pan well with aluminum foil and put it in the oven at 200 ° C to simmer for about 1.5 to 2 hours.
  • After those 2 hours, I take the pan out of the oven, mix the cabbage well, trying to keep the pieces of meat covered with cabbage. So openly return to the oven for another 1.5-2 hours with occasional stirring.
  • As a side dish, I usually make mild (almost unsalted) mashed potatoes.
