Pineapple and cottage cheese cake

Preparation steps
- BISCUITS: Mix the butter with a mixer, add sugar, egg yolks, add flour sifted with starch flour and baking powder, salt, and egg whites. Pour the mixture into a greased and floured mold. Place in a preheated oven and bake at 180 degrees for about 20 minutes.
- STUFFING: Mix cottage cheese with sugar, lemon zest and lemon juice. Stir in the chopped pineapple. Beat the sweet cream and stir into the mixture. Make the gelatine according to the instructions on the bag and add it to the mixture. Coat the biscuit with the filling. Let the cake stand in the fridge for about 3 hours.
- DECORATION: Fry the coconut flour while stirring in a grease-free pan and place on a plate to cool. Sprinkle the cake with coconut flour and decorate with pineapple pieces if desired.

Serve cold during hot summer days with a refreshing drink, coffee or a good cocktail!
