Pina Colada chicken - Thai chicken

For all those who like to sip Pina Colada :)

Preparation steps

  • Cook the rice in salted water where you added the coriander powder. The original recipe uses rice with jasmine. I don't know if that rice can be found with us, but be sure to buy it if you find it. You can also add jasmine flowers to the water where the rice is cooked. Drain, cover and leave on warm
  • In a deep frying pan or wok add oil and fry the meat and peppers cut into small pieces for about 5 minutes, add the onion and pineapple and fry for another 2 minutes and finally add the garlic and fry for an additional 30 seconds. Pour 200 ml of water.
  • Add the soup cube and carrots cut into small pieces. Simmer 5 minutes.
  • Add the other ingredients and simmer for another 10-15 minutes. Instead of coconut milk you can use coconut liqueur mixed in 100ml of whole milk or cream. When done mix in the coriander leaves.
  • Serve warm over rice.
