Picnic casserole

This week, East London hosted the G20: protests were numerous, and for the most part peaceful. The weather was beautiful - ideal for a picnic… We just needed a cooked, compact, nutritious and of course, delicious meal…

Preparation steps

  • Oven at 190-200 C
  • Slice and lightly fry the vegetables in a little oil. Add and onion powder, mix everything well and remove from the heat.
  • In a large bowl, beat the eggs and add the milk and grated cheese. Stir, add the diced bread and cayenne pepper and mix everything again: let the bread absorb well but do not allow it to fall apart.
  • Add extras. This dish is ideal for cleaning the refrigerator: when there is a little left of everything… Mix well.
  • Pour into an oiled refractory dish. Bake for about 10 minutes, or until the casserole is browned (and bounces in the middle when pressed).
