ღ Pearl and fruit tapioca pudding

There are several recipes for tapioca pudding on this site. It is an excellent food for vegans and allergy sufferers (gluten or milk). This dessert is ideal for everyone who wants something sweet and yet light after a good meal. Sugar is replaced with maple or agave syrup, so even when it is with fruit, it is one of the healthy desserts for the whole family ❀ ヅ ❤ ♫

Preparation steps

  • Boil water and vanilla in a larger pot, then add tapioca beads, stirring constantly. If desired, you can soak the beads for 15 to a maximum of 30 minutes. If you soak longer, they will become gooey. So, it is better for me not to soak and cook for a few minutes longer. Reduce heat to low and cook for about 15 minutes, stirring occasionally. The beads are done when they enlarge and become transparent. If you feel that the mixture has become too thick and sticky and the beads have not yet cooked, add a little more warm water.
  • Prepare coconut milk (it can be added as desired, lemon or lime juice if you like), sweeten with maple syrup or sweetener you use. Of course, you can also use plain sugar that has previously been well dissolved in coconut milk.
  • Strain the cooked beads, then pour cold water over the strainer. Fill half of the cooked tapioca in each bowl or glass in which you will serve, then pour over the coconut milk. Add berries on top, or a freshly sliced ​​banana apple, pineapple roll ... another fruit of your choice, mango puree or roasted pumpkin with cinnamon is also one of my favorite options. Play around, you will find your best combination. Serve immediately or leave to cool well for a few hours in the refrigerator.
