In the absence of other ingredients for cakes, mom would make us happy with this simple cake, which would disappear just as quickly as any other. And she always tried to break the monotony of simplicity by adding something different to the cake each time; coarsely chopped walnuts, raisins ... or she would pour it over the bay.

Preparation steps

  • Biscuit: Whisk the egg yolks and sugar until foamy. Beat the egg whites in the snow. Add grated lemon zest and flour mixed with baking powder to the egg yolks. Finally, lightly stir in the egg whites. Bake at 180 ° C until nicely browned - try with a toothpick, it must come out dry (casserole 37x21 cm).
  • Sprinkle the cooled cake with powdered sugar to which you can add vanilla sugar if desired.
  • With walnuts: Finally, mix coarsely chopped walnuts into the biscuit mixture and bake in the same way.
  • With bay: Put sugar, water and lemon to boil. Let the water be 2 fingers above the sugar. Cook until thick, syrupy, and finally add the vanilla sugar. Let it cook for a few minutes, then pour the cake evenly, which has also cooled for a few minutes.
