Patatesli gubate boregi (Turkish potato triangles)

Preparation steps
- Clean and cut the potatoes into cubes. Boil it in salted water. Drain the boiled potatoes and mash. Meanwhile, heat the oil in a pan and rinse the finely chopped onion on it until wilted, reduce the heat and add the tomato concentrate with one teaspoon of water, stirring lightly fry together with the onion to extract the bitterness from the concentrate, for a few minutes. Put the onion mixture in the mashed potatoes, add the paprika, a little hot pepper, salt, pepper and chopped parsley. Stir everything well to combine.
- You can use the dough usually for pizza. Roll it out thinly. Draw circles of the size you want (I use 10 cm in diameter). Coat the circles with a mixture of melted butter and sesame oil.
- Place a spoonful of the filling on the dough, then fold it as in the picture, into a triangle. Coat the dough with a mixture of honey and egg yolk, then sprinkle with sesame seeds. Bake at 200C / 20 min. Until they catch a nice color.

Serve hot or cold with tea.
