Pasta with zucchini and cottage cheese
I really wanted something like this - light, fast, without an oven and to consume the cheese that is on the exhale. I didn't find anything similar so I decided to make something myself and it turned out really nice!
Preparation steps
- Finely chop one large onion and fry it in a little oil.
- Chop the garlic and add the onion.
- Grate the zucchini on a larger grater (for apples). Add them as soon as the garlic smells.
- Season with salt and pepper to taste. If desired, add more spices such as basil, dill, etc.
- Separately, stir in a tablespoon of the stock with a little milk, add the cottage cheese and, if thick, dilute with a little liquid yoghurt or kefir. Mix the resulting mixture with the zucchini.
- When the sauce boils, taste and add more spices (if necessary). Cook for another 5 minutes, remove from the heat and stir in the cooked pasta and bacon that you previously fried separately in the pan.
Serving
You can serve hot or cold with fresh vegetables.
