Pasta with chicory
It stood in the fridge for days and then it occurred to me - if it can with radicchio, why not chicory. And my gaze fell on a small piece of brie cheese in the corner on the middle shelf….
Preparation steps
- fry finely chopped leeks in olive oil.
- add sliced chicory to the strips, salt and stir until the vegetables wither.
- add the wine and cook until the wine evaporates
- meanwhile cook the pasta in plenty of salted water.
- add the strained pasta to the pan along with a couple of tablespoons of the water in which it was cooked.
- put sliced brie cheese on top, and sprinkle with parmesan cheese.
- place in a preheated oven (200 degrees) and bake for about 5 minutes that is until the cheese melts and the pasta gets a golden color
Serving
I usually buy that thin, smaller leek, but if you use large specimens only one will suffice.
