Parfait Pineapple and champagne cake
It was Saturday morning, I went to the kitchen for a cup of coffee in my half-sleep and pajamas, and that's what happened. Totally to my taste - parfait made of cream cheese, pineapple, white chocolate and champagne on a crunchy base of muesli and biscuits. Do you need any more arguments? :)
Preparation steps
- Caramelize the muesli with brown sugar and honey, crush the biscuits by hand (leave a few larger pieces) and lightly mix into the muesli, add the jam and melted butter and mix well and press into a round cake tin (diameter 26 cm). Leave in the refrigerator to harden.
- For the 1st part of the cream - heat the pineapple juice and dessert wine with honey, separate a little liquid and mix with starch flour and sugar, and boil in the remaining liquid. Stir the crushed chocolate into the heat and stir until it melts riti cover with aluminum foil and leave to cool.
- For the 2nd part of the cream - prepare the gelatin according to the instructions, mix the whipped cream hit (foam) with milk and mix the gelatin. In another bowl, mix the cream cheese with the powdered sugar and combine the mixture.
- Combine the 1st and 2nd part of the cream into a compact mixture, at the end lightly mix in the pineapple pieces and spread on a base of muesli and biscuits.
- Leave in the freezer (1-2 hours) then in the refrigerator (preferably overnight).
- Before serving, dip a kitchen cloth in hot water and lightly run it over the cake mold (to make it easier to separate the rim of the mold) ...
- (I used muesli with dried fruit and crunchy chocolate balls, Paris biscuits with vanilla filling, Nestle white chocolate)

Serve chilled, serve with a glass of wine and sweet kisses…
